Sorry Mama
The "Sorry Mama" concept embodied a challenge to conventional street food and a playful aesthetic.
"Sorry Mama" is a roll bar featuring a dining area with seating and an open kitchen specializing in quickly prepared rolls.
Work on the project involved organizing the team:
- Naming and concept development
- Logo book design and branded products (including brand identification in the interior)
- Organizing kitchen work (with menu development, technical specifications, equipment selection, inventory, suppliers, staff. Development of checklists and kitchen schedule)
- Market analysis
- Development of Gantt calendar plan and task execution control
