“Sorry Mama” – roll bar, which presents a trading hall with seating, open kitchen with instant rolls.
The concept of “Sorry mama” embodied a challenge to banal street food and hooligan aesthetics.
The work on the project was to organize a team:
- naming and concept development
- logo design and branded products (including brand identification in the interior)
- organization of kitchen work (with the development of menus, shopping malls, selection of equipment, inventory, suppliers, staff. Development of checklists and kitchen routines)
- market analysis
- development of the Gantt calendar plan and control over the implementation of tasks
